Having spent over two years working in Slovakia, I am well used to Pilsner Urquell as mentioned above. That along with the original Budvar Budweiser and two Slovak local beers called Topvar and Smady Mnich (Thirsty Monk).

I will be drinking Budvar in approx 84 minutes. There is one bar in Hong Kong with it on draft. Cannot wait. That stuff is nectar. The only problem is I have trouble walking afterwards because its so strong!

This may be a very silly or even stupid suggestion, but I'll ask it all the same:

Won't an ordinary aquarium type pump work for this - they are cheap, tested and the air pressure, bubble size etc can be adjusted. The only thing is that they tend to create a lot of movement within the water (a form of convection caused by the rising bubbles) I realize that this will introduce air i.e. oxygen plus other gases that are present in air, and that this may not be what you actually need - but who knows - It may be an alternative!

You need to get an electric mobility scooter (4 wheels) like I have. I use that to get from my apartment to my favorite pub and back. Enjoy your Budvar!

It probably would work, but I would be afraid that it might introduce a stray yeast from the air or a bacteria and spoil the batch. It would be very difficult to keep a sterile environment with one I think. The Oxynator I mentioned uses a compressed 3 to 5 pound tank of oxygen and a tube down into the wort to do its job. With only the tube and the fittings on the oxygen tank to keep clean, I think it would be the better choice.

I am with you. I didn't realise that the yeast in the air could affect the way the fermentation process takes place. Know I understand.

Yes an an aquarium pump dose work but as stated can be difficut to Keep sterile various home brewing companies supply an air brick (not the correct word but all I can thing of) but mine became unsterile. Probably leave in a cup of hot water.

Your system may work ok as a very smalll scale check pg if you have difficulty getting the gravity you want then need more oxygen

to calcutale alcohol content at start take saccorometer take reading say 1048
at end take reading sat 1012 alcohol content 1048-1012 *0.13 _ % alcohol.!
this was an exampE i HAVENT A CLUE WHAT IT IS 36 *.13 = (found my calculator 4.68 % alcohol)

Its not pretty!
But it is the best larger.

My specific gravity to start seemed a bit low at 1.038. When I siphon into the carboy for the second fermentation, I will do my best to splash a lot to get more oxygen in it.

won't that get air yeast into the process? Maybe the amount is relevant to the whole process. I donot know as I have zero knowledge on brewing beer - just lots of experience filtering it - hahaha

Yeah -- there is always some risk of airborne yeast or bacteria. I think it is less when I siphon though as it will be into a glass carboy that I have sterilized and there is only a small diameter opening to the outside air. The biggest worry I would have with the aquarium pump is that it would be difficult if not impossible to sterilize. I will be taking pics when I do the transfer tomorrow and will post them on the blog.

Do you mean Ceske Budejovice ? This is the home town of Budvar Budweiser, the original and best budwieser. I cannot agree that the town is not pretty. It has a lovely square in the middle with the Black Tower.

It may not be Prague or Bratislava but it is still a nice place.
