Long pig makes for lots of crackling pig
Crackling is a must on Danish Pork Roast

I have told this a zillion times and I have no plans to stop it:
Christmas coming up in Rhode Island
- invited friends for traditional Danish Christmas on December 24th in the evening
- that's when Christmas is celebrated!!!
Went to the supermarket. Meat counter.
Ordered and specified and emphasised to the man with the bloody apron:
"And you should - make that must - leave the crackling on. This is important! In fact it's crucial!"
He gazed at me. Sideways.
"Sure!"
I waited. He came back. He proudly showed me sad the sorriest pork roast I ever saw.
I wailed crying "You didn't leave the crackling on!"
"No, Ma'm. It's not good for you." not talking
I didn't ask for dietary guidance. shame on you
We had a major culture clash.
I know it clogs my arteries, but what can you do?
He just wanted to help raised eyebrow
Bring on the crackling, sunfolk, please, SIR!
- I gotta find miself a screaming female ....

Those are some pretty impressive waves, Little Mermaid. I knew better than to approach with coffee in hand this morning. laughing

The bar has a couple of pigs roasting over hickory out back, so there'll be no more conversation about mermaid steaks!

- but never mind, sunfolk got distracted by the long pigs
- and I'm sure it's their crackling fragrance slowly roasted over hickory
I can smell here some 4225 miles or 7825 kilometers as the crow flies
from your backyard in Florida
mmmmm .... I'm looking forward to that.

As Time Goes By
I have the dessert for us
- at Christmas we eat "Ris à l'amande" with warm cherry sauce ....
- like radishes it sticks to our national red-and-white colours
- and, actually we like it so much that we eat it at any get-together during December

I'm sorry to have been tardy. I was a bit 'overhung' this morning, and was slow to get going. sick

The wonderful thing about roasting cyber-pigs is that they can be ready any time one wants them to be. Would you care for some now, or is it too late where you are?

The dessert looks marvelous. I had to look it up.
