[rant mode]Well I'm sure they are very happy behind their closed doors. All 20 of them!! Pathetic. Next thing you'll know is that they are all doing wierd handshakes and rolling up their left trouser legs.
Can't wait for the results of the voting for the new team captain, that should be a model for demoracy, and the new logo he creates for himself. Let's hope it's as tacky as the last set of smilies. ![]() COCONUT BREAD Ingredients : 3 cups Flour 1 cup Sugar 1 tablespoon Baking Powder 1 Egg 1/2 teaspoon Salt 1 teaspoon Vanilla Extract 1 1/2 cups Milk 1 cup Toasted Grated Coconut Method : Preheat oven to 350 degrees. Butter and flour a loaf pan. Sift flour, baking powder, and salt together. Stir in coconut. Beat egg until foamy. Add milk and vanilla to egg. Stir into dry ingredients. Mix well without beating. Pour into loaf pan and bake 1 hour. Terrific breakfast treat sliced and toasted. |

Greetings, Coconauts! Tony, where is everyone? ![]() Good Question! JC Rudi is currently at work outside of Canada. He was going to try and post the odd message depending on being able to connect to the web, so we may still hear from him, otherwise it will be the end of the week before he returns. As to Rob and Akela? Rob has posted to a message board we are both members of, so he is still around, other than that I cannot say. He is not responding to e-mails. Whistlin has returned to the Seychelles. He will make the odd post from the Cable and Wireless facility there, from time to time. Dr. P and bodgee are silent members. All are still crunching for the common cause and we completed 7 years crunching as a team yesterday. ![]() |

![]() AUBERGINE WITH COCONUT Ingredients : 1 large aubergine sliced 1 tsp Turmeric 1 1/2 tsp Salt 5 tbl Vegetable oil 1/2 tsp Black mustard seeds 1 small onion, chopped 1 Clove garlic, crushed 1 Green chili, finely chopped 1 tsp Grated ginger 2 tsp Ground coriander 1 tsp Ground cumin 1/2 tsp Chili powder 1 Bay leaf 1 pch Ground cinnamon 3 tbl Cider vinegar 1 1/2 cup Thin coconut milk ( 1 can of coconut milk, diluted with 1/2 can of water) 1/2 tsp Sugar Method : Mix salt and turmeric. Rub this into the aubergine slices. Heat 4 Tbsp of the vegetable oil and brown the slices on both sides. (A Teflon pan is especially good for this) Remove browned slices from pan and set aside. Heat remaining Tbsp oil and fry mustard seeds till they crackle. Add the next 9 ingredients (including cinnamon). Fry a minute or two. Pour vinegar over aubergine slices. Add them to the spice mixture. Gently stir in the coconut milk and simmer VERY SLOWLY, stirring frequently, for about 15 minutes. Add the sugar, remove from the pan and serve. |
